Lemon Fried Bluegill

Ingredients:
 
• 1 cup flour
• 2 teaspoons lemon zest
• 1/2 teaspoon salt
• 1/4 teaspoon pepper
• 1 cup water
• vegetable oil for frying
• 1-1/2 lb bluegill or other white fish
• flour for dredging
 
Directions:
Mix flour, zest, salt & pepper in a bowl. Whisk in water to make batter. Chill for 30 minutes. Heat oil to 375ºF. Dredge fish in flour, then in batter. Fry on each side till golden brown. Drain on paper towels.
